How far back does the backfill go?

As far as Search Console allows, which is about 16 months. From the day you connect, nothing ages out.

Does it include image, video and news search?

Not yet. We store web search data, which is where most sites get their clicks.

Why do your totals differ slightly from Search Console?

Google hides rare queries for privacy, so rows by query add up to less than the daily total. We store both and label which is which.
